Eggs of Service
Where eggs crack, seeds roast,
and Amsterdam awakens
Shakshuka
Eggs of Hospitality
Eggs cracking at the precise moment of warmth. Tomatoes slow-cooked until they surrender their sweetness. Spices that carry lineage from before maps had lines.
The women who were the bridge to better—preserving what came before 628, perfecting it through Islamic continuation. Their hands carried the craft forward. Their kitchens became the archives.
This is not fusion. This is ancient craft, perfected through generations, served with reverence.
"Every morning, we crack eggs the way it was done before borders existed. You don't just eat Shakshuka here—you consume the philosophy itself."
THE EGG MADE EDIBLE

Pre-628 heritage, perfected through simplicity
The Seven Shakshukas
Seven origins. One table. Each one a different memory of home.

The Infinite Garden
Preserved lemon, harissa, chickpeas, chermoula. Heavier. Earthier. Built for a cold morning when you need the earth beneath you.

The Fire Within
Sucuk, Aleppo pepper, thick labneh. The heat does not announce itself. It arrives quietly, then stays.

The First Warmth
The mother of all versions. Slow-cooked tomato, cumin, paprika. The one that was here before names were needed.
The Sweet Earth
Cinnamon-scented shakshuka with caramelised onions, fresh coriander, and a drizzle of date molasses. Comfort that tastes like home. Served with aish baladi — the ancient Algerian flatbread that has held the table since before names were written down.
"Algeria knows sweetness. Not sugar, but depth. The earth knows what it means to give."
The First Cup
Fenugreek, black cumin, honey drizzle, warm khubz. Coffee began here as devotion. So did this egg.
The Unbroken Table
Za'atar-rubbed eggs, fresh herbs, pomegranate. Lighter. Brighter. A table that has never stopped being set.
The Return to Kandahar
Turmeric and dried coriander carry the spice. Slow-roasted tomatoes and dried mulberries — sweet, dark, and deep. A spoonful of qurut melts over the top as it arrives. Served with bolani — the thin, stuffed flatbread of the homeland — instead of sourdough.
"The soil of Kandahar is the sweetest on earth. This is what it tastes like when it reaches the table in Amsterdam Noord."

The meal reaches you. Another reaches someone in need.
The First Ambassador of Love
KHAYBAR Salon is not merely a location—it is the prototype, the first living demonstration of the 9:1 Manner.
We are our first client. The Salon purchases fresh roasted seeds from KHAYBAR Roasters. Every 9kg generates 1 meal. Every cup brewed is service proven.
The Salon nurtures—eggs crack in warmth, bodies are fed, presence is held. The Roasters provide—seeds transform, strength flows outward, the household sustains.
Together, they create the environment where awakening happens. Not by force, but by balance.
When you visit, you experience what we offer every café, every roastery, every business that awakens.
Not the first in time—but the First Ambassador.
The crack begins here.
The Space
Where warmth incubates and cracks begin
From Seed to Service
The Roasters provide the seeds—transformed through strength, delivered through action. The Salon receives them—nurtures warmth, holds space, feeds bodies.
Every 9kg purchased generates 1 meal for someone in need.
This is the household complete: outward provision meets inward care. The children—customers, servants, the community—grow in the balance.
When you visit the Salon, you experience the nurturing. When you awaken to the service within, you become the Ambassador—cracking from the inside.
The Hatching: 999kg
We opened our doors in October 2025 / Rabi' al-Awwal 1447. When we reach 999kg of coffee seeds served, the egg fully hatches—the Production Kitchen activates, the prototype is proven, the First Ambassador completes the demonstration.

The First Ambassador hatches, the model is proven
Every cup brings us closer to the crack.
The First Ambassador incubates. When the crack completes, others will follow the path.
